The risk with this vegan keto experiment is that it is hard to enough and get all the calories you need. A dinner is not enough, you need 3 meals and enough variety to keep you going. You also need to do this for several weeks before you can tell how it’s working for you. I’m not a vegetarian or vegan, but I am on a keto diet.
